Keto Mac N Cheese

Aloha and welcome to Hawaiian Keto Girl, where I feature local keto eateries and onolicious recipes that are mainly influenced by Hawaii’s unique cuisine.  Today’s recipe is the ultimate comfort food.  If you’ve been following me online, you know my husband is from the east coast and having been together for 12+ years, our food choices have definitely influenced one another.  With that said, it should be to no surprise that I learned how to make his mom’s Mac and Cheese.  I’ve been making this recipe for years now and it has become a family favorite during the holidays or potlucks.

KETO FRIENDLY PASTA

Finding a low carb elbow noodle was the first priority when recreating this dish.  That is when I came across Elbow Macaroni by Low Carb Bread Co. on Amazon.  I’ve seen others make this dish with cauliflower and that’s fine too, but we like to use this noodle.  I haven’t tried other noodles for this recipe, so please comment below if you have suggestions. This noodle seems so similar to a regular noodle that even my non-keto ohana loved it and couldn’t tell the difference!

MAC N CHEESE HAWAII STYLE

In our home, Mac N Cheese is typically served on special occasions, usually during the holidays. It is something my husband always requests along with banana pudding. At our table, you will find Mac n Cheese served along side kalua pig and maybe even mac salad. That is the nature of our ohana, a beautiful blend of cultures. This recipe would pair well with my Keto Crab Cakes or even my Keto Vinha D’alhos.

Ingredients
  

  • 1 tbsp Butter
  • 8 ounces Keto Friendly Elbow Macaroni I used Great Low Carb Bread Co.
  • 4 tbsp Butter
  • 1 tbsp ground mustard
  • 2 cups heavy whipping cream
  • 1 tsp xanthan gum
  • dash of pepper
  • 1 tsp salt
  • 2 ounces cream cheese
  • 3 cups sharp cheddar cheese

Instructions
 

  • Boil the pasta with 1 tbsp of butter for 8 – 10 minutes. Drain and set aside.
  • Make the cheese sauce: simmer 4 tbsp of butter, ground mustard, heavy whipping cream, xanthan gum, pepper, salt, cream cheese, and sharp cheddar cheese.
  • Pour the cheese sauce over the pasta in a baking dish. Top with 1 cup of sharp cheddar cheese. Top with paprika. Bake at 350 for 30 minutes.
