My recipes are always sugar free, low carb, onolicious, keto friendly, and simple enough for the everyday cook. Like many of the recipes that I share, this is one also so nostalgic to my childhood. My maternal grandmother is Portuguese and taught her daughter (my mom) this recipe, who taught me. This recipe has been an ohana favorite for many years. I remember requesting this for birthdays and special occasions. It is one of the very first dishes I learned to cook. This recipe works well with any type of protein, but we will be using beef for this particular recipe. I have used pork and chicken with this recipe as well and they are equally both delicious. My grandmother has also used this on fish, however I haven’t tried that yet. When recreating this recipe I had to omit the potatoes. Omitting the potatoes did not modify the taste of this dish. Instead of using potatoes as the side dish, we now use a side of salad and it’s great.
Hawaii Kine Keto
There are two things that are priority when making this recipe. The first thing is vinegar. My mother insists that we must use apple cider vinegar. The second thing is garlic. My mother also taught me that an excellent Vinha d’alhos recipe has a lot of garlic. The more garlic, the better! My recommendation is to crush the garlic cloves in large chunks so that you can avoid eating them if you are restricting and or limiting your carbs. This recipe would pair well keto macaroni salad. Now that I have gotten the important details out of the way, let’s get into this recipe!
Keto Vihna D’alhos
Ingredients
- 2.5-3 lbs chuck roast
- 14 cloves garlic crushed
- Salt, Garlic Powder, Pepper to taste
- 1 cup apple cider vinegar
- 1/2 cup water
Instructions
- Crush the garlic and fill in the spaces of the roast.
- Season the bottom of the roast.
- Add apple cider vinegar and water.
- Season the top of the roast.
- Bake for 45-60 minutes at 350 degrees.
- Baste the roast periodically.
- Broil for 5 minutes until crispy edges form.
