Hawaii’s local food is a fusion cuisine from different cultures. A great example of that is the famous plate lunch which can incorporate Filipino, Chinese, Japanese, Hawaiian, Korean, Puerto Rican, food and probably more. Today’s blog gives a glimpse into Hawaii’s plate lunch as we will be making Kalbi (Korean BBQ Short Ribs) with a side of Mac salad. This Korean sauce is so versatile and can be used on chicken, fish, spam, pork, it works on anything! You can also use this sauce as a dipping sauce.
If you choose to use it as a dipping sauce, I recommend heating it over the stovetop to cook the garlic down. Fresh garlic is a lot more potent than cooked garlic, which is why I think fresh garlic is great for a marinade.
The base of this recipe is Tamari, which is a great substitute for shoyu (soy sauce). It is low in sugar and can be sweetened with your favorite sweetener. Other substitutes for shoyu are Kikkoman or Coconut Aminos.

KETO SWEETENERS
I have tried four different sweeteners so far. There are many different brands and options. When I reintroduced myself to the world of keto, I saw all the keto influencers promoting Swerve, so I tried it too! I was able to find Swerve locally so that was convenient. However, my husband often referenced the cooling effect he would get after eating something with Swerve in it. Needless to say, he did not like it. I then went on the search for something else. I tried Anthony’s Confectioners erythritol and same thing, the cooling effect happened. I researched some more and found allulose! Allulose is great because it does not have the cooling effect. Both sweeteners are great for the low carb lifer, but try both to find out which one you life the best! Here are the brands we have tried:

- 4 lbs. beef short ribs
- 1/4 cup green onions
- 1 tbsp. minced ginger
- 4 tbsp. roasted sesame seeds
- 2/3 cup Tamari
- 3 tbsp. water
- 3 tbsp. sweetener I used Swerve (Granular)
- 2 tbsp. sesame oil
Instructions
- Mix all the ingredients (mix and heat on the stove if you are using this as a dipping sauce)
- Allow short ribs to rest in the marinade over night
- Broil for 8 minutes on each side
- Enjoy!
