When I think of Hawaii’s plate lunch, I think of three major things: rice, protein, and mac salad. Put it this way, whenever you attend an ohana gathering, there will always be mac salad and rice. Mac salad is almost as synonymous as Spam is with Hawaii. Though Hawaiian mac salad is commonly served in a plate lunch, it makes a great side dish to any meal. It is the best keto comfort food. And if you are missing rice in your diet, then this is the recipe for you! Keto mac salad is basically a cold pasta salad and is very filling.

My mom makes the best (potato) macaroni salad. Her recipe includes potato, elbow macaroni pasta, onion, eggs, mayonnaise, olives, peas, carrots, salt, pepper, and sometimes sugar, depending on the amount of onions used. I’ve taken her recipe and recreated it into a keto friendly side. Peas and carrots are higher in carbs, so I’ve omitted these. However, if you have room in your macros, go for it!
My recipe includes mayonnaise, elbow macaroni by Great Low Carb, a zero carb can of olives, onion, eggs, and salt and pepper to taste. This makes the perfect side to any meal.
Keto Hawaiian Mac Salad

- 3 Eggs
- 1/4 cup Onions
- 1/2 cup Mayonnaise
- 8 ounces Keto Friendly Pasta I am using elbow macaroni by Great Low Carb
Instructions
- Boil the eggs until done, peel, and set aside to cool
- Boil the elbow macaroni, drain, and set aside
- Mince onions
- Shred the eggs
- Mix eggs, elbow macaroni, onions, olives, and mayonnaise
- Salt and pepper to taste
