A KETO VERSION OF A BIG ISLAND OHANA TRADITION
Today’s recipe takes me back to my childhood days growing up in Hilo, Hawaii. My paternal grandfather would always make chicken long rice for any ohana potluck and holiday. I cannot remember a holiday without my Papa’s chicken long rice. He went on to teach his recipe to his daughter, his daughter-in-law (my mother), and his wife, my Nana. Papa is no longer here with us and I wasn’t able to learn how to make his recipe from him but my Nana and Mom taught me the way. Papa’s trick to a good chicken long rice is all about the ginger and garlic. When learning this recipe, I was able to spend time with my Nana and Mom and we had a blast. Making It Keto Friendly
Turning this recipe into a keto friendly recipe was all about finding a replacement for the long rice noodles. That is why I am so happy to have found keto glass noodles, also know as, tofu noodles, yam noodles, konjac noodles, and shirataki noodles. I actually think they have a very similar taste and texture to long rice noodles. It is a great replacement and is available on Oahu. I have been able to find these noodles at Safeway and the Commissary.
Keto Chicken Long Rice
Ingredients
- 1-2 tbsp oil I used olive oil
- 1-2 inches fresh crushed Ginger
- 4-5 cloves crushed garlic
- 3 lbs chicken thighs
- 28 ounces Shirataki noodles aka “yam” noodles or “tofu” noodles
- 10-16 cups water
- 2 cups green onions
- Salt to taste
Instructions
- Sauté: 1 tbs oil, 1-2 inches of fresh crushed Ginger, and 4-5 cloves of crushed garlic.
- Add 3 lbs chicken thighs and cook until done.
- Prepare 28 ounces of shirataki noodles on the side.
- Boil 10-16 cups of water in a separate pot.
- Once the chicken is cooked through, begin to add your salt (to taste).
- Add noodles and stir.
- Add boiled water into the pot of chicken long rice, just enough to cover everything.
- Add salt (to taste).
- Add 2 cups of green onions.
- And enjoy!
