Jack-in-the-Box Inspired Keto Tacos

Welcome to my blog, Hawaiian Keto Girl, where I create sugar free, low carb, keto Hawaiian recipes. I take local Hawaii recipes and turn them into ono (delicious) keto friendly options. Today’s recipe is not from Hawaii, but it is ono! When I first posted a picture of these, I received a lot of response and a lot of questions. I even received phone calls about this recipe asking for step by step instructions. That’s when I decided to make a YouTube video and now, a blog, for those that like to read.

Have you ever had Jack-in-the-Box tiny tacos? If you haven’t, you don’t need it, just use this recipe. And if you did have it, you need this recipe too because it is way more filling and a lot less carbs.

The key to this recipe is finding a low carb tortilla. We have been using missions low carb tortilla but I have recently found a new low-carb tortilla at my local Safeway which I have come to love. Choosing the right tortilla is going to depend on your macro needs and or restrictions. What are some of the tortillas that you use?

The next key to this recipe is your taco filling. You can choose whatever type of filling you want but for this recipe, we will be using ground beef. I like making my own taco seasoning and have been doing this for a long time now. I can’t remember when I last used the taco seasoning in the packets. Comment below if you would like my taco seasoning recipe, it is very simple and tasty.

Last and finally not least, you’ll need a cheese sauce. I have worked on this recipe for so long, which is probably why this blog has taken me forever to write. Having a good cheese sauce that is low-carb is so hard to do. But I think I figured it out for all of us. The secret ingredient for this is chicken broth. 

You will also need lettuce that will be chopped thinly!

Jack-in-the-Box Inspired Keto Tacos

Ingredients
  

  • 1/4 cup Taco seasoned hamburger
  • 1 tortilla Misson Foods Carb Balance Flour Tortilla or La Tortilla Factory Flour Tortilla
  • 1/2 cup Lettuce
  • 1/4 cup Low carb cheese sauce

Instructions
 

  • Brown crushed garlic cloves in your oil of choice, add ground beef, taco seasoning, and cook until done. Set aside.
  • Prepare your lettuce; wash, chop, dry, and set aside until ready for plating your masterpiece.
  • In a separate pan, heat oil, fill your tortilla with 1/4 – 1/2 cup of ground beef, place in pan, and fry each side until golden brown.
  • Place lettuce on top of your tortillas, drizzle 1/4 cup of cheese sauce, and have your spicy mayo ready for dipping! Enjoy!
