Keto Avocado Jello from Hawaii
Growing up, all I knew was Hawaii. While The Aloha State is a melting pot of many cultures, there’s still a whole world out there that I really wanted to explore, and I couldn’t just get out of the island willy-nilly.
Luckily, the diverse population of Hawaii lets me explore the world through the different cuisine that our beautiful island has to offer. One such easy Hawaii favorite recipe is the humble yet onolicious avocado jello.
The avocado jello is one of my fondest memories with my Papa, as this is one of his famous desserts that gets you through any dinner. My Papa was a lovable second-generation Filipino-American, and he grew his produce right in his backyard.
I learned this recipe from him and have held it in high regard ever since. That’s why when I turned to keto as my nutrition go-to, I tried my absolute best to make my very own keto-version of my Papa’s avocado jello.
Hawaiian Keto Avocado Jello Nutrition

Keto Avocado Jello – The Recipe
The Ingredients● 1 cup mashed avocado● 1/3 cup mayonnaise● 1/2 cup sweetener of your choice● 1 cup HWC● 2 packs of gelatin mixed well into 3/4 cups of cold water

Ingredients
- 1 box Sugar Free Lime Jello 0.09 oz
- 1/3 cup Mayonnaise
- 2 cups Heavy Whipping Cream
- 1 cup Avocado mashed
- 2 envelopes Gelatin
Instructions
- 1. Mix 3 cups of hot water into a lime jello mixture, pour into a pan, and refrigerate until firm, for about 3 to 4 hours. This will be our lime layer. As the mixture cools, we can begin working on the avocado layer.2. Mash 1 cup of avocado in a bowl and set aside.3. Add the 2 packets of gelatin into 3/4 cups of cold water and allow it to bloom for 3-5 minutes.4. While the gelatin blooms, mix the mayonnaise and HWC in a pot over medium heat.5. As soon as you see tiny bubbles forming, remove it from the heat and stir in the sweetener until it is fully dissolved. Quickly pour this warm mixture into the bowl of mashed avocado and mix well.6. Add the bloomed gelatin to the warm avocado mixture and mix until fully incorporated. Let this mixture cool to room temperature.7. Lay the cooled-down avocado layer above the lime layer as soon as it firms up. Make sure to pat dry any excess water on the surface of the lime jello before pouring the avocado later.8. Chill and serve.
