Chicken Kabocha – Yum!

Aloha and welcome to my blog, where I share keto friendly, sugar free, and low carbs recipes that are inspired by Hawaii’s unique local cuisine. Today’s blog is nostalgic to my childhood as I grew up in Hilo, Hawaii.

My papa was a farmer on the Hamakua coast, Ookala to be exact. He grew all sorts of vegetables and fruits. I specifically remember his kalamungay tree that grew on the side of the house, on a very steep slope of a hill. I remember routinely asking my Papa to pick kalamungay as it was my favorite vegetable that he grew. I loved it when he used it with Chicken Papaya or when my mom used it to make this Kabocha Chicken stir-fry. Needless to say that this recipe is a favorite of mine. Unfortunately, I was unable to obtain kalamungay for this recipe but you can definitely add it, if you are able to get your hands on it.

I love this recipe because it is simple and basic with three main ingredients, chicken, Kabocha, and kalamungay. The wonderful thing about this recipe is that you can expand it and evolve it into something else by adding green beans, eggplant, and even tomato. My friend once told me that it reminded him of Sari Sari, a Filipino soup.

Traditionally, it is served over a bed of rice but with keto, you will omit the rice and just enjoy the squash and vegetables as it is. When I learned Kabocha was keto friendly, I was so elated.

This recipe has a total of eight servings. The macros per serving are as follows:

Net carbs: 5.1g

Fiber: 1.4g

Total carbs: 6.5g

Protein: 29.9g

Fat: 18.7g

Chicken Kabocha Stir-Fry

This recipe is simple and perfect as is or can evolve by adding kalamungay, green beans, dried shrimp, tomato, eggplant, and more!

Ingredients
  

  • 4 cups kabocha cubed
  • 4 lbs chicken thighs boneless/skinless
  • 4 cloves garlic crushed
  • 2 tbsp olive oil
  • Salt, Pepper, and Garlic Powder to taste

Instructions
 

  • Microwave the kabocha and cube. Sauté the garlic in olive oil, add the chicken, and cook thoroughly. Add the kabocha and allow to cook until tender. Add seasoning to taste.
