Welcome to Hawaiian Keto Girl, where I transform local Hawaii recipes and turn them into keto friendly, low carb, sugar free options. As with many of the recipes I share, this one is nostalgic to my childhood. I recall my mother making tofu stir fry with a sweet shoyu (soy sauce) based sauce. It was a favorite of mine and I have created a keto version that tastes so ono and is so filling. I am so happy to share this keto version with all of you.
Sugar Free is Key for Keto
This recipe has a sweet shoyu based sauce (I used tamari and Swerve’s brown sugar replacement for this recipe) and includes shiitake mushrooms, chicken, bok choy, shirataki noodles, and tofu. It is seasoned with garlic, ginger, sesame oil, sesame seeds, salt and pepper, and green onions. The seasonings are definitely iconic to Hawaii as it takes on a similar taste to teriyaki sauce. The major difference between shoyu based stir fry meals that you find everywhere in Hawaii and this particular recipe is that this recipe is sugar free and low carb. Replacing the sugar with a keto friendly sweetener is all the original recipe needed.

Keto Shiitake Mushroom Chicken Stir-Fry
Ingredients
- 3-4 cloves garlic crushed
- 1.5 lbs chicken
- garlic powder, salt, and pepper to taste
- 1/4 cup Tamari
- 1/4 cup water
- 2 tbsp brown sugar replacement
- 2 tbsp minced ginger or crushed
- 1 tbsp Sesame Oil
- 1-2 bags 1 ounce Dried Shiitake Mushrooms
- 3-4 bags yam noodles
- 1 medium Bok Choy
- 2 tbsp Roasted Sesame Seeds
- 2 tbsp Green Onions
Instructions
- Brown 3-4 crushed gloves of garlic in your oil of choice.
- Add 1.5 lbs of Chicken when you begin to smell the aroma of the garlic and season to taste with garlic powder, salt, and pepper, cooked for a few minutes until chicken is almost cooked through.
- Add Tamari + water + brown sugar replacement + ginger + sesame oil and simmer for 1-2 minutes.
- Add shiitake mushrooms + noodles, simmer for 7 minutes.
- Add Bok Choy, allow to wilt down for about 1 minute.
- Garnish with Roasted Sesame Seeds + Green Onions.
- Enjoy!
