Creating the Keto Spam Musubi Recipe
Cream cheese can really make anything better. I often use butter and cheddar cheese on our cauliflower as a side dish for dinner, which made me think I could try cream cheese. This is where the idea for keto Spam musubi came to life and I am happy with the turn out.
The secret sauce is something I saw my parents make for me and my sister growing up in Hilo. It is ono! It it is a shoyu sugar (in keto Iife, it is sweetener, not sugar) base. The secret is in the ginger and garlic, so do not skip this step.
Keto Spam Musubi
Equipment
- 1 Musubi Mold
Ingredients
- 1 can Spam
- 12 oz cauliflower
- 1/4 cup Tamari
- 1/4 cup water
- 1/4 cup sweetener I used Allulose
- 4 cloves garlic crushed
- 1 inch ginger crushed
Instructions
- Microwave the cauliflower until soft enough for the food processor to cut through easily. Add water, microwave for 2 minutes. Strain the hot water out. Rinse under cold water to bring it to a temperature warm enough to touch. Ring out as much water as possible till cauliflower is dry.
- Slice the spam
- Prepare the secret sauce. Combine Tamari, water, sweetener, garlic, and ginger in a pot and simmer the spam flipping the spam halfway through. I allowed the spam to simmer for 2-3 minutes per side. Add water as needed.
- Build the musubi
- Enjoy! 🙂
